"This wine is a blend of Touriga Franca, Tinta Roriz, Tinta Amarela, Tinta Barroca, and Rufete. These organic vines are more than 60 years old, and are planted at high altitudes facing east and north, contributing a nice cool environment for the grapes to maintain higher acidity and youthfulness. Maceration took place over four weeks with very light pumpovers to extract as little as possible, aiming for softer tannins. The wine was then finished in French Oak for 20 months. Pair this with a Caldeirada, a traditional Portuguese fish stew, cooked with whatever fish or shellfish you like."
